With these guys, gender is up to you, as it doesn't really matter a whole lot once I get breeding up and running~ <3

So is there a significance to the cat breed section?

With the fantasy kitties, the fish-gene is in the shown section, but still a recessive gene. So the cat-gene gives the markings, but the fish-gene gives the colors. It comes into play more in the breeding.
